Abstract

Dry foods, including cereals, pulses, nuts, seeds, and dried fruits, are important components of healthy and sustainable diets due to their high nutrient density and long shelf life. The removal of moisture concentrates essential nutrients, making these foods rich sources of energy, protein, dietary fiber, vitamins, minerals, and bioactive compounds. Pulses such as lentils, chickpeas, and soybeans provide high-quality plant protein, iron, zinc, and folate, while dried fruits supply antioxidants, potassium, magnesium, and phytochemicals that support overall health. Scientific evidence indicates that regular consumption of dry foods can improve diet quality and contribute to cardiovascular and metabolic well-being. Their high energy density makes them valuable for meeting nutritional requirements, particularly in regions with limited food availability. In addition to their nutritional benefits, dry foods enhance food security by reducing post-harvest losses, extending storage life, and minimizing transportation costs. As environmentally sustainable and affordable food sources, dry foods can play a significant role in promoting human health and supporting resilient food systems worldwide.
